Lemon Honey Chewy Slice

I N G R E D I E N T S :

For the slice

  • 1 1/2 cup plain flour

  • 2/3 cup caster sugar

  • 170 gram butter (or use coconut oil for dairy-free option)⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 tablespoon lemon zest

For the topping

  • 4 eggs⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/2 cup caster sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 5 heaped tbsp honey (we recommend using our Lemon Infused Clover honey)⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/4 cup lemon juice⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 3 tablespoon lemon zest⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 teaspoon fresh ginger, grated⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/4 cup free from gluten plain flour⠀⠀⠀⠀⠀⠀⠀⠀⠀

M E T H O D :

  1. Preheat oven to 180°C and line a Swiss roll tin with baking paper.

  2. Process the flour, caster sugar, butter and lemon zest until it resembles breadcrumbs.

  3. Tip into the tin and gently press down to make an even base.

  4. Bake for 15 to 20 minutes until golden.

  5. While the base cooks, make the topping. Beat the eggs with the sugar until light and frothy. Add the honey and beat until incorporated.

  6. Stir in the lemon juice, zest, ginger and flour, then mix until combined.

  7. Pour over the hot base.

  8. Bake for a further 35-40 minutes until set. Cool and cut into squares.⠀⠀⠀⠀⠀
